I don’t know about you, but there is something delicious when strawberries appear, either in your garden or the grocery store.
They are delicious and it doesn’t matter how you prepare them because they rarely lose their flavor.
Today I’m going to be sharing with you my family’s easy strawberry pie recipe. This go-to recipe requires only 3 ingredients and is super simple to make.

Easy Strawberry Pie Recipe for the Summer
This recipe will make 2 and 1/2 pint jars full (or 2 delicious pies).
* As a note, I bought my strawberries from the grocery store this year and as I did this recipe 1 pound of strawberries (the average size container) made 1 cup of mashed strawberries. Please check the poundage on the package so you’re aware of how many pounds per cup you need to purchase.
- 6 cups mashed strawberries
- 3 cups + 3 Tbsp. sugar
- 1 cup + 3 Tbsp. cornstarch
Place the strawberries in a large strainer and put under cold running water to clean the fruit.
Remove from the water and begin cutting off the green tops off the strawberry. Then place them in a blender and blend until smooth (about 1-2 minutes).
Measure out 6 cups of mashed strawberries into a large pot (as big as you have). I recommend at least a 12-quart size pot for convenience in cooking. The pot HERE is a great starter pot if you don’t already have one at home.
Once 6 mashed cups are in the pot, turn the heat to medium and stir in the sugar until the sugar is dissolved.
Once the sugar is dissolved, add the cornstarch and combine. Whisk/stir frequently and cook until the strawberries begin to boil.
Allow the strawberries to boil for 1 minute. Remove from the heat and allow to cool to room temperature.
If you’re making the pie continue to read the instructions.
Once the pie has cooled to room temperature, preheat the oven according to the directions on the frozen pie shell (usually between 375-400F).
Spoon the strawberry pie filling into the frozen pie shell as desired. Place in the oven and cook according to the shell’s directions (usually about 20-30 minutes).
Remove the pie from the oven and allow to cool to room temperature. Place in the refrigerator for at least 3 hours before serving (storing the pie in the refrigerator overnight is the best and is what I recommend).
Remove from the fridge and garnish the top with cut strawberry slices, eat, and enjoy this delicious taste of summer.
