  • 1 cup all-purpose flour
  • 2 cups sugar, DIVIDED
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 4 cups peach slices (fresh or canned)
  • 1 Tablespoon lemon juice
  • 1//8 cup ground cinnamon (add more if desired)

Instructions:

In a large bowl melt the butter and place in a 13×9-inch baking dish.

In a separate bowl combine the flour, 1 cup of sugar, baking powder, and salt.

Stir in the milk.

Pour the batter over the butter but DO NOT stir.

Preheat the oven to 375 degrees (F).

In a large pot on medium-high heat, pour the peaches, lemon juice, and the last cup of sugar into the pot and stir constantly.

Allow the liquids to boil for 2 – 3 minutes.

Remove from heat and pour over the batter (again, do not stir). Sprinkle the cinnamon on top (add more if desired).

Bake at 375 degrees (F) for 40 minutes or until golden brown. Serve the cobbler warm or cool (and feel free to add ice cream on the side).
