Don’t you just love making festive foods, especially when certain holidays come around? St. Patrick’s Day recipes gives you an excuse to use your green food coloring, while Valentine’s Day meals have everyone seeing pink, white, and red.
The easy marshmallow recipe I’m sharing with you today is one my mother would make all the time. I grew up in the 90s where kids were allowed to bring homemade treats to share with their class.
And with 5 kids with birthdays fairly close together, my mom knew there would never be any leftovers to bring home when she made this recipe.
One of the things I love most about this marshmallow recipe is the fact that you can change the color and add all sorts of toppings to match your favorite tastes.
There are a few topping suggestions at the end of this recipe. In the meantime, here is the festive and easy marshmallow recipe.
Festive and Easy Marshmallow Recipe
Ingredients Needed:
- 2 envelopes of Knox gelatin
- 3/4 cup cold water
- 2 cups sugar
- 3/4 cup boiling water
- 1 tsp vanilla
- Green food coloring
Instructions:
Soak 2 envelopes of gelatin in 3/4 cup of cold water. Set aside.
Bring 3/4 cup of water to a boil and add 2 cups of sugar. Stir constantly and boil for 10 minutes. (The sugar and water will become a thick and creamy liquid, which is what you want).
Pour the sugar-water mixture over the gelatin mixture and add 1 teaspoon of vanilla and a few drops of green food coloring.
Beat for 20 minutes using a mixer (your arm will thank you.)
The mixture will become a thick and creamy liquid. While the marshmallows are in the mixture, spray a 9×13 pan with cooking oil.
After 20 minutes pour the mixture into the cooking pan and place in the fridge for 4 hours or overnight. (The more time you’re able to give your marshmallows, the better).
Once the marshmallows are set you can easily cut them into squares or soak a cookie cutter with water to make festive decorations.
Roll into powdered sugar. You can also add coconut, sprinkles, peppermint pieces, etc.
